Well, I am now half way through, the strangest thing has been my craving for sweets. I have made sure I am getting enough vitamin D, Calcium, B12 and Liquid iron. Since I already take everything but the calcium it was an easy addition. I found “coconut yogurt”, I didn’t even know it existed. I love adding berries and my homemade granola.
So, this week my favorite “wins” are peanut butter/chickpea breakfast cookies, strawberry muffins, and my Roasted Pepper and Carrot soup with coconut milk. I also made my zucchini applesauce.
I do notice I am eating more bread than I normally do, my mother would be proud of me. Although I do eat beans or lentils on a weekly basis, eating them daily is a lot at the moment. My favorite breakfast is turning out to be toasted English muffins with hummus on one side with lettuce, cucumber, tomato and then smashed avocado on the other side. I have been having Peach and ginger protein shakes(pea protein)with almond beverage with them. It seems to be as balance as I can make my mornings…until I come up with something more spectacular.
I miss eggs and I miss cheese. Vegan cheese does not taste like cheese more like rubber and it is expensive. I am still moving on, will give you another update soon.
